Broccoli and Almond butter soup

Had to share this family favourite! I know it's a soup but it's delish hot or cold and so good for you, really akalizing and full of vitamins and minerals.

INGREDIENTS:

3 heads of broccoli
1 onion
8 gloves of garlic
1.5ltrs good stock (we love chicken)
Dollop of Almond butter

 

METHOD:

Sauté up the chopped onion and garlic in a little coconut oil.


Add the stock


Chuck in your cut up broccoli - the stock should just cover.

Bring to the boil and when brocolli is soft whizz until your desired consistency, we like smooth. Season with some pepper. Serve with a good spoon of Almond butter.

 

So good!

For added goodness use some good homemade broth/stock. Our kids (think most kids) aren't that keen on broth by itself so this is a great way to get all that amazing nutrient rich broth into them.
